Below is the email I sent to CSA members to describe our first boxes. A couple corrections/addendums... 1) I lied... we did manage to pick enough green beans for everyone to have a few. 2) While the first of you may have had some beautiful swiss chard as is shown in the picture, many of you found yours wilted pretty quickly. Beef Queso Dip
Ground Beef: 1 pound ground beef 4-5 green onions - white part only, diced 2 garlic cloves diced salt and pepper 2 teaspoons (or move) ground cumin 1 jalapeno chopped 1 cup chicken low sodium broth 1/2 cup salsa (See Janice's Cilantro Salsa recipe or use whatever you love. Janice's Cilantro Salsa
This recipe has been adapted and updated a few times and is really just the base for whatever you like in your salsa. Feel free to modify and invent your own creation! 2 drained quarts of tomatoes (or equivalent skinned, peeled with some seeds removed). Note: the "draining" and "removing seeds" really contributes to how much liquid is in it. Depends on how particular you are. Large bunch of cilantro.
