Beef Queso Dip
Ground Beef:
1 pound ground beef
4-5 green onions - white part only, diced
2 garlic cloves diced
salt and pepper
2 teaspoons (or move) ground cumin
1 jalapeno chopped
1 cup chicken low sodium broth
1/2 cup salsa (See Janice's Cilantro Salsa recipe or use whatever you love. Original recipe uses tomatillo salsa)
Queso:
3 Tablespoons unsalted butter
4-5 green onions - white part only, diced
Poblano or Jalapeno diced
2 garlic cloves diced
1/2 cup salsa (See Janice's Cilantro Salsa recipe or use whatever you love. Original recipe uses tomatillo salsa)
2 Tablespoons flour
1 1/2 cups milk
10 oz queso fresco cheese
8 ounces monterey jack cheese
Optional Mix Ins: sour cream, guacamole, cilantro, chives
Cook Ground Beef:
Cook ground beef to crumble, remove grease
Add all ingredients except salsa and cook for about 10 minutes until the broth is evaporated.
Add salsa and set aside or put into crock pot.
Cook Cheese Sauce:
Melt butter
Add onion, peppers, garlic and cook until soft.
Add salsa
Stir in flour and then slowly pour in milk while stirring
Whisk until thickened
Reduce heat to low and add cheeses
Add milk if you need to thin it out a bit.
Pour over meat
Add mix ins and garnishes (chives, cilantro, tomatoes).
