How to turn a zucchini into a glazed donut (adapted from lemon zucchini bread)
A: Mix these dry ingredients including chocolate chips (keeps them from falling to bottom)
2 cups all purpose flour
1/2 tsp salt
2 tsp baking powder
1/2 cup white chocolate chips
B: Mix these wet ingredients separately
2 eggs
1/2 cup canola or vegetable oil
1 1/3 cup sugar
Combine top A and B and then add these ingredients
4 Tbsps. lemon juice freshly squeezed from a lemon (save 2 Tbsp. for glaze)
1/2 cup buttermilk
1 medium to large zucchini - shredded and drained on a paper towel
Pour into 1 or 2 9x5 GREASED loaf pans depending on whether you want one big loaf or two smaller
Bake in preheated oven at 350 for 50-60 minutes or until toothpick can be inserted and pulled out clean.
While still warm, make glaze and spoon over bread.
Let glaze set before cutting/serving
Glaze:
1 cup powdered sugar
Reserved lemon juice from above
1 Tbsp. Milk (optional)
